Bellingham Blue Burger

Cooking Instructions

METHOD (PATTY)

  1. Combine all ingredients well and make six pattys of equal size
  2. Cover and leave to chill in the refrigerator on a tray for about an hour.
  3. Grill pattys as required.

METHOD (BLUE DRESSING)

  1. Crumble blue cheese into sour cream and mix the rest of the ingredients gently in a mixing bowl.
  2. Leave in the fridge to chill for about an hour.

METHOD (RED ONION MARMALADE)

  1. Sweat red onion in sunflower oil, add brown sugar until caramelize.
  2. Add red wine vinegar and red currant jelly and reduce over a low heat.
  3. Chill and set aside.

ASSEMBLE

  1. Toast brioche buns or baps of your choice.
  2. Place patty on bun and use blue cheese dressing generously.
  3. Top with salad greens and red onion marmalade.

INGREDIENTS (BEEF PATTY)

  • 500g good beef mince
  • 50g bread crumbs
  • 1 small onion diced
  • 1 whole egg
  • Salt and pepper to season

INGREDIENTS (BLUE CHEESE DRESSING)

  • 100g sour cream
  • 100g Bellingham blue cheese
  • Squeeze of lemon juice
  • 5g roast garlic paste
  • 5g Dijon mustard

INGREDIENTS (RED ONION MARMALADE)

  • 2 small red onions sliced
  • 4g brown sugar
  • 60ml red wine vinegar
  • 40g red currant jelly
  • Salt and pepper to season

ACCOMPANIMENTS

  • 6 brioche burger buns or similar
  • 50g of mustard leaf, watercress or rocket
